Skinny Chicken Fajita Soup

Chicken breasts

Bell peppers

Black beans

Garlic cloves

1 15 ounce can

Tomatoes, fire roasted

8 cups

Chicken broth

1/2 cup

Brown rice

Fajita seasoning packet

1 tsp

Olive oil


NOTES

  • Didn’t add brown rice, instead ate with baked corn tortilla strips. Would add corn. Topped with sour cream, avocado, and cheese. Didn’t have canned roasted tomatoes, just cut up 4 Roma tomatoes and cooked them down in a separate pan.
