large chicken breasts, (diced into 2-inch cubes)

vegetable oil

large onion, (diced)

3 cloves

garlic, (minced)

1 1/2 cups

frozen mixed vegetables, (thawed)

cooked white rice (preferably a day or two old (but it's ok if it's fresh; I also used sushi rice, but you can use whatever rice you prefer))

2/3 cup

low-sodium soy sauce OR 2/3 cup Soy Vay Teriyaki Marinade
