We opted not to puree the potatoes and thickened it with about 4 tbsp of roux instead. We also added the cheese 1/2 cup at a time until reaching the desired flavor, which ended up about 1 cup less than the recipe calls for. The process was 30 min start to finish, and everyone enjoyed it.
