Dehydrated Sliced Potatoes

the larger potatoes are stored in the shed

but then you always have those potatoes that are too

first i peel them. yes by hand

the potato are put in cool water

then i put my blanching pot on to boil. once the water comes to a full rolling boil i take my potatoes out of the cool water and put them in the water

after minutes they go into a colander and immediately run water over them to stop the cooking process

then i put my blanched potatoes in ice water

then the potato are placed on dehydrator shelves and until at 125 degrees

then i them
