Roasted Butternut Squash with Olives, Garlic and thyme

actually on my drive home from p town yesterday i got the first snow

nothing is more satisfying at this time of year then some roasted vegetables

1 can

as a side dish

butternut squash

12 cloves

garlic

4 tbsp

olive oil

1 serving

salt and pepper

1 tsp

thyme

1 cup

cured olives

1 cup

grape tomatoes

2 larges

peel and dice the butternut squash and place it in a ovenproof dish

pour over olive oil

place in the oven and roast

place it back in the oven and roast until the squash is

serve warm or
