cornstarch

1/4 cup
vegetable oil
1 cup
sugar
6 tbsp
ketchup
3/4 cup
apple cider vinegar
1 1/2 tbsp
soy sauce
1 1/2 tsp
garlic powder
NOTES
I use rice vinegar instead of apple cider vinegar.
Make sure the oil is VERY hot and the chicken gets crispy on all sides before removing from the oil.
You don't have to cook the chicken pieces throughout but you want a nice crispy exterior before baking so the coating doesn't get soggy.
I also only bake it at 325 for 45 minutes rather than an hour so the sauce doesn't reduce as much.
