Super easy and very delicious! The meat was flavorful and moist. Next time I will use salt, pepper, and poultry seasoning even more heavily and will apply it the night before vs an hour before cooking. We used a cast iron Dutch oven to prevent splatter mess, and it worked well.
It was simple and delicious. The skin was crispy and the flavor was perfect. You can play with the herbs and seasoning. I didn’t salt is overnight bc I forgot. I salted it for about and hour.
Early in the pandemic when it was tough to get to Costco and everything seemed to be in short supply we started buying frozen whole chickens and roasting them ourselves. It's so easy and good! This is the recipe we have been using. We typically do 2 at time, eat one and debone and shred the other to freeze for use later. It's perfect for soup, enchiladas, salads, casseroles.... Our kids love it because we make gravy from the juice and bits that accumulate in the cast iron skillet--gravy is a hit at our house!
