Quinoa Salad with Edamame, Cucumber and Avocado

shelled and cooked edamame

For the Dressing:

rice wine vinegar

1 1/2 tbsp

Tamari (or soy sauce)

1 tbsp

sesame oil

1 tbsp

lime juice

1/8 tsp

grated fresh ginger
