INGREDIENTS
1/2 cup
natural creamy peanut butter (almond, cashew butter OR sunflower / pumpkin seed butter work as well)(heated slightly until liquid-y)
1/4 cup
liquid honey (brown rice syrup, agave syrup or date paste will work as well)
1/4 cup
finely shredded coconut (I used unsweetened but you can use sweetened if you prefer)**
2 cups
oats - 1/2 cup rolled oats and 1 cup quick oats (use gluten free if necessary)
1/3 cup
mini chocolate chips or chopped chocolate chunks*, plus more for studding, if desired
salt, optional but highly recommended for offsetting the sweetness
Optional Add-Ins
1 tsp
pure vanilla extract
1 tbsp
ground flax seeds or ground chia seeds
1 tbsp
melted coconut oil
*Raisins or Dried Fruit (Cranberries) instead of or half with chocolate chips
