Easy Vegetable Soup

INGREDIENTS

onion

1/4 cup

celery

1 can

canned tomatoes

12 ozs

spicy v-8 juice

3 cups

beef broth

potatoes

1 bag

vegetables

1 tsp

basil

1 tsp

salt

1/4 tsp

garlic powder

bay leaves

1 large

drizzle 1 tbsp olive oil in the bottom of a stock pot

saute the onion and celery

add the tomatoes

bring to a boil

reduce to a simmer and cook until vegetables are tender

the soup will stay warm

i boil just one of water in the microwave

you also throw in some edamame
