Khoresht-e Fesenjan; Chicken Stew with Walnut & Pomegranate

INGREDIENTS

khoresht-e fesenjan is a persian dish which traditionally was made

adapted from a recipe at the iran chamber society

olive oil

2 cloves

garlic

onion

1 1/2 cups

walnuts

1/2 tsp

turmeric

1/2 tsp

cardamom

1/2 tsp

coriander

1/2 tsp

salt

1/2 tsp

pepper

bay leaf

2 cups

chicken broth

1/3 cup

pomegranate molasses

2 tbsps

brown sugar

2 lbs

chicken thighs

1 serving

salt and pepper

1 tbsp

oil

1 serving

stir in the ground walnuts. increase the flame slightly and cook

1 serving

stir in the turmeric

1 large pieces

cut the chicken thighs in half and trim any of fat. sprinkle the meat

heat the oil in a skillet. brown the chicken on both sides . it's not necessary that the chicken be through as it will continue to cook in the stew

allow it to cool and reheat it tomorrow. it seems more flavourful a day later
