Morning Glory Muffins

baking powder

1 tsp

ground cinnamon

3/4 tsp

salt

1/2 cup

vegetable oil (I used melted coconut oil)

large eggs

1 8 ounce can

crushed pineapple, undrained

large carrots, shredded (about 1 1/2 cups)

1/2 cup

raisins

1/2 cup

 unsweetened shredded coconut

Turbinado sugar, for sprinkling on top of the muffins, optional (I added this)
