can of chickpeas, drained and rinsed

can of white beans, drained and rinsed

1/3 cup

kalamata olives, halved

1/3 cup

roasted red peppers, chopped

1/3 cup

red onion, chopped

1/2 cup

cherry tomatoes, halved

bell pepper, seeds removed, diced

1/4

of an english cucumber, seeds removed, chopped

1/3 cup

crumbled feta cheese

1/4 cup

fresh mint, chopped

1/4 cup

fresh parsley, chopped

green onions, green and white parts chopped {optional}

1/4 cup

extra virgin olive oil

2 tbsp

red wine vinegar

lemon, juiced

garlic cloves, minced

Salt and pepper

Optional spices: 1 teaspoon of any spice you like {try sumac, za'atar, oregano}

Crushed red pepper for extra spice {optional}
