Easy White Bean and Chicken Soup

olive oil

medium white onion, chopped

clove garlic, minced

(9 oz) package frozen white corn

(15 oz) cans Great Northern beans, undrained

(7 oz) can diced green chilies

1/2 tsp

ground cumin

1/2 tsp

coriander

1/2 tsp

oregano

1/4 tsp

cayenne pepper (optional)

3 cups

chicken broth

3 tbsp

lime juice

limes, cut into wedges

1 cup

Cheddar cheese, grated

1 cup

sour cream

1 cup

salsa

2

green onions, chopped

2 cups

corn tortilla chips


NOTES

  • Add 2 Tbsp cornstarch and 2 Tbsp water when bringing to a boil to thicken
