Sausage, Potato, and Cabbage Soup

olive oil, (separated)

smoked sausage (for a healthier option we use hardwood smoked turkey sausage)

unsalted butter

of 1 small (~3/4 cup) yellow onion, (diced)

stalks (~1/2 cup) celery, (thinly sliced)

medium (~1 cup) carrots, (peeled and diced)

and 1/2 teaspoons minced garlic

ths of 1 full small green cabbage, (cut into bite-sized pieces)

1 can

fire-roasted diced tomatoes, (undrained)

16 oz

unpeeled baby red potatoes, (diced)

5 cups

Swanson Beef Stock ((Swanson's beef broth will also work))

1/4 tsp

paprika

2 tsp

dried basil

2 tsp

dried oregano

2 tsp

Italian seasoning

1

bay leaf

Fine sea salt and freshly-cracked black pepper

Optional: fresh thyme

Serve with crusty sourdough bread!
