You will need 2 wide-mouth mason jar lids.

ice-cold water

!For the spiced peach filling:

large peach, peeled and pitted

1/4 tsp

ground ginger

1/4 tsp

cinnamon

1 tsp

lemon juice

2 tsp

flour

1 tbsp

sugar

egg, beaten

optional: sparkling sugar for topping the pies
