5 - 6 lbs beef marrow bones (buy them cut into pieces so marrow is exposed)
5 stalks celery (quartered)
2 onions peeled and quartered
4-10 cloves garlic peeled
1 teaspoon black peppercorns
1/2 teaspoon red pepper flakes
1/2 bunch fresh parsley*
3-4 fresh thyme sprigs*
3 dry bay leaves*
1 sprig fresh rosemary*
1 pat butter
