Strawberry & Banana Overnight Oats

INGREDIENTS

1 cup

rolled oats (use certified gluten-free oats if desired (be sure to use the same measuring cup when measuring out the liquid as well if using the same 1 to 1 ratio as I do))

large ripe banana (mashed)

strawberries (hulled and diced)

1/3 cup

unsweetened shredded coconut

1 tsp

chia or flax seeds

1 tsp

honey (agave or maple syrup *optional (feel free to leave out if banana is sweet enough))

1/2 tsp

vanilla extract

1/4 tsp

ground cinnamon

3 cups

your favorite milk or liquid (I used a little bit more than 3/4 cup but you can add more or less depending on how thick you like it)

1 tbsp

Greek yogurt (I used non-fat plain *optional)

Toppings
