21 Day Fix Instant Pot Teriyaki Chicken

INGREDIENTS

Teriyaki Sauce:

6 tbsp

low sodium soy sauce

1/4 cup

pure maple syrup

1 tbsp

sesame oil

1 tbsp

rice vinegar

2 tbsp

grated fresh ginger (can sub ground ginger, but the fresh is the bomb!)

1/2 tbsp

minced garlic (again can sub garlic powder)

1/2 tsp

chile garlic paste (this is the amount that I use that my kids will eat, if I'm meal prepping this for lunches just for myself, I use at least 1 tsp - gimme some heat!)

2 tsp

cornstarch

Remaining Ingredients:

1 1/2

lbs boneless, skinless chicken thighs, well trimmed

1 cup

canned pineapple (packed in 100% juice), drained

Optional Brown Rice:

2 cups

long grain brown rice

2 1/4 cups

water

Optional Veggie Side Dish:

6 cups

whatever veggies you like - I like to use broccoli, red bell peppers, green onions and some water chestnuts!
