Lime Cilantro Chicken with Mixed Rice and Black Beans

honey

olive oil for sauce + 1 tablespoon for cooking chicken

1/2 tsp

salt, or to taste

1/2 tsp

pepper, or to taste

1/4 tsp

cayenne pepper, optional and to taste

about 1 1/4 pounds boneless skinless chicken breasts, diced into bite-sized pieces and seasoned with salt and pepper

about 3 cups cooked rice (I used two 8.8-ounce pre-cooked Uncle Ben’s Original Rice packets)

1 15 ounce can

black beans, drained and rinsed

1 cup

corn (I used frozen that I added straight from freezer)

3/4 cup

red bell pepper, seeded and diced small (orange or yellow peppers may be substituted)

3/4 cup

cilantro leaves, chopped; or to taste
