Carrot and Apple Latkes {Vegan}

INGREDIENTS

small Apple (peeled, core removed and grated (try to avoid tart/bakingvarieties, these should be sweet))

large Carrots (peeled, ends trimmed and grated)

small Onion (skin removed, ends trimmed and grated)

Garlic or garlic powder (optional)

Juice of 1/2 a Lemon

1/2 tsp

Salt

1 tsp

Pepper (to taste)

Spices such as cinnamon (allspice and ginger, optional)

Tbl Ground Flax Seed + 3 Tbl Water (allow to sit for 10 minutes to thicken)
