I mix about 1/3 of the butter into the batter. A little squeeze of lemon on the pancake as it is fresh out of the oven is a super tasty embellishment.

I use 1 tbsp salt. For a twist do 50/50 milk/buttermilk. Shorten cook time for convection.

Great, so easy! Pretty thin, but tasty. I doubled the recipe and made one 9x13 man, and then made mini German pancake bites by cooking the rest of the batter in mini muffin tins. My kids LOVED them! Heat the tins in the oven, then spray with cooking spray once out, and bake for 8-10mins.
