baby carrots, (thicker ones halved through the length)

small yellow onion, (halved and sliced)

minced garlic ((4 cloves))

olive oil

Italian seasoning

Salt and freshly ground black pepper

chopped fresh parsley

Grated parmesan, (for serving (optional))
