boneless skinless chicken breasts, cut into bite-sized chunks (approximately 2 good-sized breasts should work)
onion powder

coriander

coconut milk from a 14.5 oz. can of well-stirred, full-fat coconut milk (reserve remainder for other use)

coconut aminos (or tamari)

apple cider vinegar

pure maple syrup

large yellow onion, sliced thinly (or combination of 1/2 red and 1/2 yellow like in the photo)

assorted sweet mini peppers, sliced thinly into strips (or use 2 medium bell peppers, preferably red or orange)

- or 2-inch piece of ginger, peeled and cut into matchsticks (use 2 inches if you like ginger like I do!)
Yummy, healthy and easy! Almost everyone liked it except the pickier younger kids. I thought the meat had a great flavor and was very tender.
