It would be better as a side dish. Way too rich
I only used Parmesean because that's what I had, and I didn't think this lacked any flavor at all! I also made this partly dairy free by using vegan butter and oatmilk. The flavor was exquisite. If you know of a vegan Parmesean cheese, you may want to try it out to make it completely dairy free. I can see this tasting delicious with gluten free pasta if needed. Would absolutely make this again.
