fresh corn on the cob (can also use two small bags of corn from Trader Joe's)

2 cups

quinoa

kosher salt

ground pepper

red onion chopped

tri-color pepperazzi peppers chopped (6 oz jar)

2 cans

black beans rinsed and drained (15 oz)

limes (for for lime juice)

1/4 cup

vegetable oil

1/4 cup

red wine vinegar

cumin

honey (can also use 2 or 4)

4 ozs

mexican queso (it is a white cheese in the cheese section and just grate it)

1 bunch

cilantro chopped
