INGREDIENTS
1 cup
granulated sugar
1/4 cup
+ 2 Tbsp water
1/4 cup
salted butter, (diced into 1 Tbsp pieces)
1/2 cup
heavy cream
1/2 tsp
fine sea salt, (or more to taste)
NOTES
remove from heat when the sugar mixture reaches 330 F for a light, Werther's taste, up to 345 F for a darker, full flavor. I added 1 TBSP of corn syrup to prevent crystalizing.

This caramel is smooth and delicious! It takes a little longer to cook than the recipe indicates--probably closer to 30 min. It's really good on ice cream. 😋 I added 1 tbsp of corn syrup to prevent crystallization. 340 F is the temp at which the sugar mixture reaches the desired color.
