Very good! Kids said this was a keeper! I used frozen chicken in the crockpot, cooked the quinoa separately at the end and added it to the chicken in the crockpot. Turned out perfect!
I omitted the corn and it was great. I had frozen shredded chicken in the freezer so it was super easy to throw together. Fresh squeezed lime as one of the condiments was perfect. Even the kids liked it. It probably serves 8 instead of 6 though.
