INGREDIENTS

bag of Red Bliss Potatoes (also called Red Potatoes), leave skins on, wash, cut away any bad parts and cut into 3/4 inch pieces

1 cup

chopped celery

1/2 cup

yellow onion, chopped

large hard-boiled eggs (, chopped)

1/2 cup

fresh dill, chopped

1/2 cup

mayonnaise

1 tbsp

Dijon mustard

1 tbsp

kosher salt for boiling the potatoes *see my tips for success below

Salt and pepper to taste (, for serving)
