chipotle pepper in adobo sauce, diced

2 tsp

adobo sauce from the can of chipotles in adobo

garlic cloves, minced

coconut oil

green bell pepper, chopped

red bell pepper, chopped

sweet onion, sliced

coconut jasmine rice

1 1/2 cups

jasmine rice (I use brown jasmine rice from Trader Joes)

1 1/2 cups

light canned coconut milk

1/2 cup

coconut water

coconut oil

finely shredded, unsweetened coconut
