Greek Chicken Souvlaki

For the Marinade

Boneless, Skinless Chicken Breasts, cubed in 2″ pieces

Zest and Juice Of 2 Lemons, about 1/4 Cup but only use fresh!

Olive Oil

garlic, minced

1 tsp

White or Red Wine Vinegar

Sugar

2 tbsp

Fresh Oregano, roughly chopped

1 tbsp

Fresh Parsley, minced

2 tsp

Sea salt or Kosher Salt

Freshly ground pepper

Red Bell Pepper, chopped in 1-2″ pieces

Green Bell Pepper, chopped in 1-2″ pieces

Red Onion, cubed

Lemon, halved and rubbed with olive oil on the flesh side.

For the Tzatziki Sauce

English cucumber, peeled slightly (peel, skip a section, peel, skip etc)

Plain Greek Yogurt

Lemon Zest

Lemon Juice
