and 1/2 cups medium (or mild) chunky salsa

4 Cheese Mexican cheese

corn (I use Southwest Corn (has poblano and red peppers mixed in))

1 can

black beans

1 cup

couscous

1 tsp

minced garlic

1 tsp

olive oil

1 tsp

salt

2 cups

chicken broth or stock

lime (juiced and zested)

1/2 cup

chopped cilantro

Optional additions: avocado, sour cream, additional cilantro
