Paleo Carrot Cake Cookies

INGREDIENTS

2 cups

almond meal

1/4 tsp

salt

1/4 tsp

baking soda

1 tsp

ground cinnamon

6 tbsp

melted coconut oil (melt before measuring)

1/4 cup

Grade B pure maple syrup, at room temperature (warm in microwave on high for 10 seconds)

1/2 tsp

pure vanilla extract

1 cup

very finely shredded carrots, preferably organic (I like to use a microplane grater)

1/2 cup

finely shredded unsweetened coconut

coconut butter for topping, optional (but highly recommended!)
