peanut oil (or other mild-flavored cooking oil)

boneless skinless chicken breasts, cut into bite-sized pieces

small bell pepper, cored and thinly-sliced

small red onion, peeled and thinly-sliced
2
stalks celery, thinly-sliced on a bias

garlic cloves, peeled and minced
1/4 cup
low-sodium soy sauce
1 tbsp
cornstarch
1 tbsp
oyster sauce
1 tbsp
rice wine vinegar
1/4 tsp
ground ginger
optional toppings: thinly-sliced green onions, toasted sesame seeds
2 tsps
freshly ground black pepper (to taste)
NOTES
double the sauce but only use 1/4 of the corn starch called for. Cecily likes white onion better than red in this.

Easy to make, really good, I’d make it again! I added rice to mine and it was perfect.
A favorite. We added more veggies than it called for and it was great
