Barbecued lamb kofta with shredded carrot, mint and yoghurt

Spanish onion

minced lamb

preserved lemon, flesh and pith discarded, skin finely chopped

3 tsp

each ground cumin and ground coriander

2 tsp

ground chilli

garlic cloves, finely chopped

cumin seeds

gm thick natural yoghurt, plus extra to serve

60 milliliters

olive oil, plus extra for brushing (¼ cup)

Finely grated rind and juice of 1 lemon, or to taste

large carrots, shredded on a mandolin or coarsely grated

To serve: flatbread and 1 cup (loosely packed) mint
