Fresh Apple Spice Muffins

INGREDIENTS

all purpose flour

3/4 cup

sugar( I used organic white sugar)

1/2 cup

chopped walnuts

1/4 cup

instant oats(I omitted the oats. Loved them anyway)

2 tsp

baking powder(I forgot it and they still turned out fine)

tsp, salt(If you like)

2 tsp

cinnamon-Don't forget this!

1/2 tsp

fresh ginger-minced fine and crushed with the flat of your knife (or food processor it. I only had fresh ginger and it was excellent in these apple muffins. Try it!)

nutmeg

peeled, chopped apples(I left the skins on, the texture and taste are great, nutrients improved as well!)
