Butternut squash ((peeled and chopped into cubes))

Reserved cooking liquid ((from the squash/onion or the noodles...either one will work))
Delicious! My kids loved it! Not so much a cheese sauce, but I don’t think it was suppose to be cheesy. More of a creamy pasta sauce! For a little more flavor I will add 1/2 of a fresh jalapeño next time. I doubled the recipe and it made plenty extra. Quick and healthy weekday meal.
Good base. A bit bland. kids liked it. Husband wasn't too excited about it- mostly because I overdid the mustard. I added buffalo sauce the next day and spiced up the leftovers.
