Crock Pot Cilantro Chicken

finely grated fresh ginger

ground coriander

1/2 tsp

ground fenugreek

black pepper

3/4 tsp

salt

1 can

coconut milk (not light)

2 cups

fresh cilantro, chopped

chicken thighs (approx 1.25- 1.5 lb)

1 tbsp

ghee (or olive oil or butter)

for garnish: fresh cilantro, toasted slivered almonds, and radishes

serve over rice... or make cauliflower rice for a grain-free version
