Gluten-Free Pancake Bites Three Ways

INGREDIENTS

1 1/4 cups

all-purpose gluten-free flour (I like Pillsbury Gluten Free)

1 tsp

xanthan gum (leave out if your flour already has it in it)

1 tsp

gluten-free baking powder

1/2 tsp

baking soda

1/4 tsp

salt

2 tbsp

pure maple syrup

1

tablespoon  of pure vanilla extract

1

egg

1 cup

milk (for dairy-free used cashew, almond or coconut milk)

1/4 cup

vegetable oil (I like coconut oil)

cooking spray (I like coconut oil spray)

1 cup

mini chocolate chips (I like Enjoy Life Foods or)

1 cup

dried or fresh blueberries or

2 tbsp

brown sugar (2 teaspoons of ground cinnamon (mix together in a small bowl))

You can use only one topping at a time or all three. If you use all three (just use 1/4-1/2 cup per topping.)
