INGREDIENTS
* 107 grams egg whites ((I used 3 eggs aged for 3 days in fridge))
* 70 grams of superfine sugar (sifted)
* 118 grams almond meal (sifted)
* 177 grams powdered sugar (sifted)
* 1.5 tablespoons cocoa powder (sifted)
* 1/4 teaspoon vanilla extract
* 1 teaspoon red food coloring (I used Americolor Food Gel in Super Red)
* 4 oz cream cheese (cold, cut into cubes)
* 1/4 stick of unsalted butter (softened)
* 1 1/2 cups of powdered sugar (sifted)
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon of lemon juice
* pinch of salt
* 1-3 teaspoons of whole milk (optional depending on consistency desired)
