Oat Fiber Buttermilk Pancakes

INGREDIENTS

1/2 cup

oat fiber

1/2 cup

almond flour

4

packets low carb sweetener

2 tsp

baking powder (based on comment, original recipe may have left this out)

1/2 tsp

salt

1 tbsp

oil (coconut, vegetable, grapeseed)

1 cup

buttermilk

4

eggs


NOTES

  • Sub almond milk and tbl of white vinegar stir in and let stand for 5 minutes for buttermilk. Can try waffle iron. Makes 15 pancakes 3 pancakes a serving, 1.3g per serving. 1 packer sweetener = 2 tsp sugar. (2.5 tablespoons of swerve)
