Sheet Pan Italian Pork Chops with Potatoes and Carrots

olive oil

1 packet

Italian dressing mix

1 tsp

smoked paprika

1 tsp

dried oregano

1 tbsp

grated Parmesan cheese

1/2 tsp

salt

pork chops

1 1/2 lb

baby red potatoes (halved)

1 lb

baby carrots

1 tbsp

fresh parsley (for garnish)

  • I used 3 of the thick cut Costco pork chops and cut them in half for 6. I used meat thermometer and at 26 minutes my chops were done which meant the potatoes were slightly under cooked. I did not have room for the carrots on the pan so made a different vegetable. Instead of drizzling on potatoes I tossed the potatoes in the sauce.
