I used 3 of the thick cut Costco pork chops and cut them in half for 6. I used meat thermometer and at 26 minutes my chops were done which meant the potatoes were slightly under cooked. I did not have room for the carrots on the pan so made a different vegetable. Instead of drizzling on potatoes I tossed the potatoes in the sauce.
