potatoes (boiled (leftovers are even better))

spring onions (finely chopped)

grated cheese (something like cheddar, mozzarella, pepper jack or provolone)

1/2 handful

parsley leaves (roughly chopped (two tablespoons))

jalapeno (chopped)

lemon juice

salt and pepper

eggs (soft-boiled for 5 ½ - 6 minutes, peeled and cooled)

extra eggs (lightly whisked)

cornflakes (alternatively, 2 cups of Panko crumbs can be used as well)
