Cream of chicken soup, condensed

10/10. Added 2 large chicken breasts (almost 2 lbs), 2 cans of corn, garlic pepper, about 1/2 teaspoon chili powder, used chicken broth instead of water. After chicken was shredded, added about 1 cup of half and half. Didn’t stir the cheese in, just served on top. Topped with cheese, sour cream, tortilla strips, lime wedges, and avocado.

My chicken tortilla soup

I substituted prepared Extra firm tofu in a marinated tofu sauce for the chicken, an hour before cooking. Then followed recipe as stated, except that I did not drain the canned black beans. So I added 3 tablespoons of coconut milk as well as the tofu to the ingredients. Used all (optional) toppings, viola! Delish!
