Large Chicken Breasts, (or 5-6 thinly sliced chicken breasts)

Olive Oil

3/4 tsp

Dried Basil

3/4 tsp

Dried Oregano

1/4 tsp

Garlic Powder

1 tsp

Salt

1/2 tsp

Pepper

1 1/2 cups

Fresh Tomatoes, such as Campari or Grape, halved or quartered

1/3 cup

Red Onion, diced

3 tbsp

Balsamic Vinegar

2 tbsp

Brown Sugar

1 1/2 cups

Grated Mozzarella Cheese (or 4 - 8 Slices Fresh Mozzarella)

Garnish (optional):

Fresh Italian Parsley or Basil, diced


NOTES

  • Use more tomatoes and less brown sugar
