Black beans

1/4 cup

Cilantro, fresh

1 cup

Corn, frozen kernels

2 cloves

Garlic

Onion, medium

1 cup

Chicken broth, low-sodium

1 cup

White rice, long-grain

1 tbsp

Chili powder

1 1/2 tbsp

Canola or vegetable oil

1 1/2 tsp

Cumin, ground

1/2 cup

Cheddar cheese, sharp


NOTES

  • Try without rice: 1 cup broth only. Make pico de gallo next time. Delicious except a bit soupy? Tried to leave on saute a couple minutes to evaporate liquid. Maybe type of rice?
