NOTES
Excellent! Made these as muffins without frosting. I wouldn’t call them fluffy as the texture is quite close, but I liked them better than my other pumpkin oat muffin recipe. I did sub sweet potatoes with good success. Add chocolate chips for a treat!
I’ve made them again with pumpkin - even better! Also subbed applesauce for oil. Done closer to 22 min.

Very yummy! Can be muffins with chocolate chips or cupcakes. I think they are much better as muffins, since they are rather dense.
