Vegan Gluten-Free Pumpkin Spice Cupcakes

oat flour

1/2 cup

coconut sugar

2 tsp

baking powder

2 tsp

cinnamon

1 1/2 tsp

nutmeg

1/2 tsp

baking soda

1/4 tsp

sea salt

1/4 tsp

allspice

1 tsp

pure vanilla bean powder

3/4 cup

pumpkin puree

1 cup

soy milk

2 tbsp

maple syrup

1/4 cup

canola oil

vegan buttercream for frosting


NOTES

  • Excellent! Made these as muffins without frosting. I wouldn’t call them fluffy as the texture is quite close, but I liked them better than my other pumpkin oat muffin recipe. I did sub sweet potatoes with good success. Add chocolate chips for a treat!
    I’ve made them again with pumpkin - even better! Also subbed applesauce for oil. Done closer to 22 min.
