Quinoa Lentil Tacos

red quinoa (okay, it doesn't have to be red, I just like that color with the lentils)

1 cup

vegetable broth

2 tbsp

vegetable oil

garlic cloves (minced)

large red onion (finely chopped)

1 1/2 cups

cooked brown lentils (or 1 can)

1 can

diced tomatoes

1 tbsp

ground cumin

1 tsp

chipotle chili powder
