white onions, sliced moderately thin

white wine or vermouth (optional)

1 1/2 cups

brown or green lentils (not red lentils or french lentils!)

2 cups

long grain white or brown rice (I prefer the brown for a bit more character)

1/4 tsp

ground cinammon

1/4 tsp

ground cumin

Salt and pepper

Flat leaf parsley for serving
