INGREDIENTS

package rotini pasta
1
container cherry tomatoes, sliced in half
1/2 can
black olives, sliced in half
1/3 cup
cubbed white cheddar
1
jar of marinated artichokes in water
Basil Pesto, recipe below
1/3 cup
Italian Dressing, recipe below
PESTO
1 cup
basil leaves (i use mine right from my garden)
2
garlic cloves
1/4 cup
pine nuts
salt
1/3 cup
olive oil
1 tbsp
parmesan cheese
Place the basil in a blender. Pour in about 1 tablespoon of the oil, and blend basil into a paste. Gradually add pine nuts, Parmesan cheese, garlic and remaining oil. Continue to blend until smooth.
FOR THE DRESSING

package of italian dressing mix
2 tbsp
apple cider vinegar (use white vinegar if you dont have apple cider)
1/3 cup
olive oil
1 tbsp
the water that artichokes marinated in – trust me this adds amazing flavor
Mix all ingridients together.
